PEACH CORNMEAL MUFFINS
1/2 cup (1 stick) butter, softened
1/2 cup sugar
1 large egg
1 cup flour
1/2 cup white cornmeal
1/8 tsp. salt
1 1/2 tsp. baking powder
1/8 tsp. ground nutmeg
1/2 cup milk
1 cup finely chopped fresh peaches
Preheat oven to 350 degrees.
In a large bowl, cream the butter and sugar, beating until light and fluffy. Add the egg and beat again until light and fluffy.
In a separate bowl, combine the flour, cornmeal, salt, baking powder and nutmeg and mix well. Add this dry mixture to the butter mixture in two parts alternating with the milk, stirring after each addition until just combined.
Add the fresh peaches and stir to blend. Fill greased muffin tins two thirds full with the batter.
Bake for about 25 minutes or until golden. Cool for 5 minutes on a wire rack, then remove from tins and allow to cool completely.
