Recipe: Marmalade Bran Pan Bread (topped with marmalade before baking) (1980's)

MARMALADE BRAN PAN BREAD

1 cup 100 percent bran cereal
3/4 cup milk
1 egg
3/4 cup soft shortening
1 cup sifted flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
1/2 cup orange marmalade

Combine bran cereal and milk; let stand until most of the moisture is absorbed. Add egg and shortening; beat well; set aside.

Sift together flour, baking powder, salt and sugar. Add to first mixture, stirring only until combined. Spread in greased 9-by-9-inch pan. Place spoonfuls of marmalade on top, pressing lightly into dough.

Bake in moderately hot oven, 400 degrees F, about 30 minutes. Cut into squares and serve Immediately.

Makes 9 (3-Inch) squares
