Recipe(tried): Picnic Sandwich Ideas - Hi Barbara!

Sandwiches
I posted a recipe for Asian Salmon Roll-Ups (click here), nothing creamy or cheesey in there, as I have one of those don't-like-mayo-or-cheese guys, too! We took this in our cooler on an out of town trip, and it worked out just great. Spread the filling on the tortillas when we got there, divvied up the dipping, and we did just fine.

Aside from these in particular, I do also really like any kind of tortilla roll-up. You can make them ahead of time, roll them in saran wrap, and take a pair of scissors to "cut" them into bite size pieces...yum! And they come in all sorts of flavours, and you can put whatever you like inside, and roll it up.

good luck, and have fun!

Carolyn!
