BAKED RICE FLORENTINE
1 cup chopped onion
2 tablespoons butter or margarine
3 cups cooked rice
1 (10-ounce) package chopped spinach, cooked
1/2 teaspoon garlic powder
1/2 teaspoon basil leaves
1/2 teaspoon ground thyme
3 large eggs
1/2 cup freshly grated Parmesan cheese
Cook onion in butter until tender. Add rice, spinach, garlic powder, basil and thyme.
Beat eggs and stir into rice mixture.
Turn into buttered 2-quart casserole. Sprinkle with Parmesan cheese.
Bake at 375 degrees F 20 minutes.
Makes 6 servings.
