Recipe: Pineapple Dr Pepper Beans (with summer sausage) (oven or campfire/Dutch oven)
Side Dishes - BeansPINEAPPLE DR PEPPER BEANS
2 small to medium onions, chopped
2 green bell peppers, chopped
2 tomatoes, chopped
1 pound summer sausage, cut in chunks
2 cans (28 ounces each) pork and beans
1 (16 ounce) can pineapple tidbits, drained
1 cup tightly packed brown sugar
2 garlic cloves, chopped
1 (12 ounce) can regular Dr Pepper
TO PREPARE ON A CAMPFIRE:
Combine onions, peppers, tomatoes, sausage, beans and pineapple in a 12-inch Dutch oven.
In a bowl, combine garlic, brown sugar and Dr Pepper and mix until sugar dissolves. Pour over the beans in the pot and cover with lid. Settle the pot onto a bed of hot coals, sprinkle lid with hot coals. Cook for 30 to 45 minutes.
TO PREPARE AT HOME:
Combine as above. Bake in a 350-degree F oven for 45 minutes or until liquid bubbles.
Yield: 10 to 12 generous servings
