Recipe: Pocket Full of Miracles Rueben Sandwiches (using refrigerated biscuit dough)
SandwichesPOCKET FULL OF MIRACLES RUEBEN SANDWICHES
8 ounces corned beef, chopped
1/2 cup shredded Swiss cheese
1/2 cup sauerkraut, well drained
Thousand island salad dressing
1 can southern style biscuits*
water
Preheat oven to 375 degrees F. Lightly grease a cookie sheet.
Combine corned beef, cheese, sauerkraut in a bowl. Stir in just enough dressing to bind the ingredients; set aside.
Separate biscuits from 1 can refrigerated Southern-style biscuits. Press each to flatten into a 5 inch round.
Place 4 rounds on the prepared cookie sheet. Top each with about 1/2 cup filing. Brush edges with water, then top each with another round. Press edges together with tines of a fork to seal.
Bake in a 375 degree F oven 12 to 18 minutes or until golden brown.
*Like Pillsbury Grands. Eight biscuits are needed for the recipe.
