Recipe(tried): Deluxe Chicken Salad Spread
SandwichesDELUXE CHICKEN SALAD SPREAD

This can be used warm as it on bread or you can refrigerate it and use it when cooled and have a more solid sandwich. Great rich spread to liven up the original chicken salad.
2 tablespoon olive oil
1 medium yellow onion, finely chopped
1 medium red onion, finely chopped (OPTIONAL)
2-3 stalks celery, finely chopped
1/2 medium red bell pepper, chopped finely
1/2 medium yellow bell pepper, finely chopped
2-3 boneless skinless cooked chicken breasts, chopped and shredded
1 (8 ounce) package cream cheese, room temperature
1/4 cup Miracle Whip Salad Dressing
1/4 cup sour cream
1 teaspoon garlic powder
Salt and pepper to taste
Warm the olive oil in a skillet. Add either the yellow or red onion to the skillet (you could also substitute a Vidalia Sweet Onion). Once onion is almost translucent add the celery and chopped peppers to the skillet and continue cooking (do not caramelize the onion). Once vegetables are limp remove from heat. Set aside.
Warm chicken in microwave to lukewarm.
In a mixing bowl mix cream cheese, Miracle Whip, sour cream, garlic powder and salt and pepper. Add chicken and vegetables and mix well.
OPTIONAL: You can add 1/2 cup of sweet relish drained or sweet pickles chopped. I like to do that and then use thinly sliced tomato slices as a garnish with a little pepper on the tomato.
