Recipe: Bacon-Tomato-Cheese Delights (sandwiches with cheese sauce, 1950's)
SandwichesBACON-TOMATO-CHEESE DELIGHTS

FOR THE CHEESE SAUCE:
4 tablespoons butter
4 tablespoons flour
2 cups milk
1 cup shredded cheese
FOR THE SANDWICHES:
12 slices bacon, cooked
6 slices bread, toasted
3 or 4 tomatoes, cut into 12 slices
Melt butter in a saucepan; over low heat, stir in flour until well combined. Turn heat to medium and slowly stir in milk. Simmer, stirring frequently, until thickened. Remove from heat and stir in cheese. Stir until cheese is melted.
Place 2 slices bacon on each slice of toast, arrange tomato slices on top of bacon and pour hot cheese sauce over all. Serve at once.
Makes 6 servings
