Recipe(tried): Polpeta di Carne (individual Italian Meatloaves)

Hi,

Dinner is almost done and I am hurring to post so that I can spend the early evening hours relishing the end of the day poolside. I so enjoy spending my days and early evenings out there since Mom re-did the cushions. You can really tell Spring is here. Soon it will get hot and muggy.... It has been a most marvelous week and weekend weatherwise.

Polpete di Carne are simply individual little meat loaves but they are Italian. I am serving them with Sugar Snap Peas, Fresh Spinach, Tomato and Basil Salad and then later those luscious strawberries with fresh whipped cream. The Polpete I enjoy making because it incorporates all the fresh herbs in my garden. It is wonderful to eat....

Polpete di Carne
Serves 4

1 lb.ground sirloin
1/2 med. onion, minced
2 large garlic cloves, crushed
1/2 cup fresh chopped parsley
1/4 cup grated Parmesano
1 cup home-made bread crumbs
1 egg, beaten
1 tsp. salt
1/4 tsp. black pepper
1 tsp. Italian seasonings
1 tsp. freshly chopped basil
1 tsp. freshly chopped thyme

Mix everything in a large glass bowl and shape into 4 individual meat loaves, place them in a baking pan at bake at 350 for 45 minutes. Sprinkle Worcestershirte sauce over and cook for 5 more min.

I serve these alonghside a bed of fresh spinach on each plate topped with three fat slices of tomatoes, sprinkle on salt and pepper, olive oil and balsamico.

Sweet Sugar Snap Beans
I used Bird's Eye and followed the directions on the box. They are great!!
