Recipe(tried): Portuguese Fish Chowder (1950's)

PORTUGUESE FISH CHOWDER
From a favorite vintage cookbook.

1/2 cup salt pork cubes
1 cup chopped onion
3 cups diced potatoes
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon saffron
1 tablespoon vinegar
2 pounds of lean fish (haddock, whiting, flounder), cut into chunks

In a deep, heavy kettle, fry pork cubes slowly, turning occasionally, until only crisp pork bits remain. Remove these to use later.

In hot oil, fry onions slowly until soft and golden.

Add 6 cups of cold water, potatoes, seasonings and vinegar. Boil until potatoes are half done.

Add fish. Continue cooking gently until fish is tender. Add brown bits of pork.

Serves 6.
