Recipe(tried): Potato Cakes

Here is a potatoe cake recipe from the Mennonite community cookbook which I occasionally use.
Potato Cakes
2 cups leftover mashed potatos
1 lg. egg
1 Tblsp. flour
2 Tblsp. cream
1Tblsp. minced onion if desired
4 Tblsp. fat
Mix ingredients and shape into flat cakes or drop from a spoon into hot fat.
fry to a golden brown on both sides. serves 6
