Recipe: Rainforest Cafe Calypso Dip (baked using artichokes hearts, salmon and mayonnaise)

1 cup white wine
1 tbsp. Old Bay seasoning
2 tsp. Italian seasoning
2 yellow onions, diced
2 cups salmon pieces
3 cups artichoke hearts, drained
2 cups mayonnaise
3/4 cup shredded Parmesan cheese
Combine wine, Old Bay seasoning and Italian seasoning. Poach the onions and salmon in the mixture until fully cooked and the wine has reduced by half; let cool.
Combine the cooled fish mixture with the artichoke hearts, mayonnaise and Parmesan cheese.
Bake, uncovered, at 325 degrees F for 25 minutes, until heated through.
Makes 8 cups
