Recipe: Potato Curry (serves 2) (Indian)

Side Dishes - Potatoes
POTATO CURRY

4 medium potatoes
3 tablespoons oil
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/4 teaspoon chili powder
1 teaspoon curry powder
1-1/2 teaspoons salt
2 medium onions, finely diced
10 cloves garlic, minced
1/4 teaspoon garam masala powder

Pierce potatoes with a fork, and boil them for 15 minutes until they are semi-cooked. Peel the potatoes, and cut them into 1-inch cubes. Heat oil in a pan, and add cumin seeds, turmeric powder, chili powder, curry powder and salt. When the oil becomes frothy, add the onions and garlic, and saut for 5 minutes. Add the potato cubes, cover and cook on medium heat for 5 minutes.

Remove cover, add the garam masala, stir and cook for 5 minutes. Remove from heat when the potatoes are tender and appear coated in a golden brown mixture.

Note: Garam masala is a mixture of dry-roasted, ground spices such as cinnamon cumin, dried chilies and bay leaves. The spice blend is available in stores that carry Indian ingredients.
