Recipe(tried): Old Fashioned Pot Roast Dinner...

Gosh it's been a while since I last posted...seems I get involved in a house project and get soooo busy! That and cutting coupons to save money on the ever-growing food bill as well as saving on gas keeps me on my toes!
I am planning on serving an Old Fashioned Pot Roast with chunks of potatoes and carrots, noodles, rolls, and a banana pudding pie for Mother's Day. The recipes are courtesy of one of new favorite cookbooks, The Comfort Table by Katie Lee Joel. Her book is filled with recipes that make you say, "yum". She's southern meets The Hamptons and she knows how to cook!
Another cookbook purchased was The Deen Bros. Y'All Come & Eat. Also filled with yummy "gotta make that" type of recipes as well as lots of family pictures! This week I am making dinner recipes out of these two books as well as Trisha Yearwood's Georgia Recipes in an Oklahoma Kitchen.
I will be posting daily dinners and how I got 2 budget-minded dinners out of a rotisserie chicken with leftovers to freeze for later. (Cheesey Chicken Lasagna and Chicken & Broccoli Rice Casserole).
With times like this, "economy starts in the kitchen", as my dear Mama used to say. She would be flabbergasted at the prices in the grocery stores...ai ai ai!!!!
