Pound Cake

1/2 lb. butter or margarine
2 cups powdered sugar
3 large eggs
1 2/3 flour
1 tbs. lemon or vanilla extract

preheat oven to 325
spray loaf dish w/Pam (vegetable cooking spray)
cream butter and sugar on high speed for 5 min..
add 1 egg a little flour. mix 2 min
add 2nd egg and half of remaining flour, mix 2 min.
add 3rd. egg remaining flour and extract, beating 2 min.
spread batter evenly in pan.
bake 65 min. or until tester inserted into center comes out clean.
place on rack for 30 min.
remove from dish.
slice 1/2" thick, if freezing,
be sure to slice before freezing loaf.
thaw to use... good for 6 months
