BANANAS COCO LOPEZ
4 firm medium bananas, peeled and sliced diagonally
ReaLemon Lemon Juice from Concentrate
1 cup Coco Lopez Cream of Coconut
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Ice cream or cake (for serving)
Dip bananas in ReaLemon; set aside.
In large skillet or chafing dish, combine cream of coconut and cinnamon; bring to a boil. Add bananas and vanilla. Over medium heat, cook and stir 2 to 3 minutes.
Serve warm over ice cream or cake.
TO PREPARE IN A MICROWAVE:
Dip bananas in ReaLemon; set aside. In 2-quart glass measure, combine cream of coconut and cinnamon. Microwave on full power (high) 2 minutes or until mixture boils. Add bananas and vanilla. Microwave 1 1/2 to 2 minutes or until bananas are heated through (do not overheat). Proceed as above.
Makes 4-6 servings
