Recipe: Raisin Bars

Raisin Bars

1 cup light or dark raisins
1/3 cup shortening
2/3 cup brown sugar, well packed
2 eggs
1 tsp. vanilla
1/4 cup molasses
2 tbsp. orange juice OR water
1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. EACH cloves, cinnamon, nutmeg
1 cup semi-sweet chocolate chips

Soak raisins in hot water for 10 minutes. Beat till well blended, shortening sugar, eggs and vanilla. Add molasses and orange juice. Mix flour, baking powder and salt and spices; add to first mixture. Stir in raisins and chipits. Mixture will be stiff. Spread in 9 inch, lightly greased, pan. Bake 350 F. For 20-25 minutes.
