re: Baker's Ammonia for fernne

Misc.
Dear Ferne,
Ammonia IE: Bakers Ammonia and Hartshorn Crystals are the leavening ingredients. Back many years ago, before baking powder was widely available...these type of things were used. Baker's ammonia can still be purchased through King Arthur Flour catalogues. Occasionally I have found it in an old pharmacy, usually in an ethnic section of the city. Occasionally I have used it in my springerlies for Christmas time baking.
Hope this satisfies your curiosity....Donna

Editor's note:

Ordering info:Baker's Ammonia (ammonium carbonate)
Makes extra-crisp cookies or crackers; use it in old-fashioned recipes calling for it (or for hartshorn). In a 1-ounce container.
