Hi Judy, I know what you are talking about and I made made this. Mine had different cheese ball recipes in it, but I know any would work. Here's a recipe for Pineapple Cheese Ball. 2 - 8 oz. cream cheese, 1/4 cup crushed pineapple drained (more if desired), 1/2 tsp. seasoned salt, 1 tsp. chopped onions, 1 tsp. green pepper, 1/2 cup nuts if desired. Combine all -roll in nuts- chill and serve with crackers. GARLIC CHEESE BALL: 1 roll nippy cheese, 1 roll garlic cheese, 1 lb. Velveeta cheese, 1 small pkg. cream cheese, 1 small pkg. pecans, 1/4 tsp. garlic powder, 2 Tbls. chili powder, 2 Tbls. paprika. Mix garlic powder, nuts and all cheese together. Moisten hands and shape into ball and roll in chili powder and paprika mixture on wax paper. BACON CHEESE BALL -- 2- 8 oz. cream cheese, 2 - 5 oz. jars bacon flavored cheese spread, 1-4 oz. pkg. bleu cheese, 3 Tbls. red wine vinegar, dash garlic salt, 2 cups pecans .. Mix ingredients together after cheeses have sofened. Roll in pecans. (I have added Bacon Bits to this recipe and it is good) Now - assembly I have done it two different ways. #1 In a cheesecake pan I place each different cheese ball mixture in layers. Example, after making pineapple cheese press in bottom of pan and next use bacon cheese layer and next cheddar layer. Chill in frig. and unmold like a cheese cake. #2 -- I make each indvidual ball like directions say and before chilled ( while they are still soft in other words) place in cheesecake pan and press down each carefully to mold together as a cake or fill in gaps by mashing each ball down. Chill and unmmold. I know this sounds confusing but I don't know any other way to describe it without showing you. Since this is on the professional board I'm sure all the professionals are getting a big kick out of my description regarding method HA HA! Perhaps someone will make it clear for you. I hope the recipes will help!
