Recipe: Mallow Whipped Sweet Potatoes (with Rice Krispies topping)

MALLOW WHIPPED SWEET POTATOES

2 cans (23-oz each) sweet potatoes, drained
6 Tbsp margarine, softened, divided use
1 tsp cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
2 cups mini-marshmallows, divided use
2 cups Rice Krispies cereal
3 Tbsp brown sugar, firmly packed

Preheat oven to 350 degrees F. Coat a 10x6x2-inch glass baking dish with nonstick cooking spray.

Combine potatoes, 4 tbsp of margarine, cinnamon, nutmeg, and salt. Beat until smooth. Stir in one cup of the marshmallows. Spread in prepared baking dish. Top with remaining marshmallows.

Melt remaining 2 tbsp. margarine and combine with Rice Krispies and brown sugar. Sprinkle over casserole.

Bake for 20 minutes or until hot, and cereal is golden brown. Serve hot.
