Honey loses a great deal of the enzymes and taste when boiled. To reliquify honey, place jar(if glass) in pot of hot water.If plastic, place a metal jar lid under the jar. All natural honey will crystalize in time. It does not change the nutritional value. Honey keeps almost indefinitely. Edible honey has been unearthed from Egyption ruins.Store in cool, dark place in tightly closed containers.
