BARBECUED SHRIMP
2 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons fresh lemon juice
1 tablespoon butter, melted
Salt and freshly ground pepper
1 1/2 pounds large shrimp (21 to 30 to a pound), peeled and deveined
Prepare a hot fire in grill.
Combine ketchup, soy sauce, lemon juice and melted butter in small bowl. Season with 1/8 teaspoon salt and 1 teaspoon freshly ground pepper.
Dry shrimp on paper towels. Thread onto skewers. (Note: If using wooden skewers, be sure to soak them in water for at least 20 minutes before using.) Lay single layer of skewers on baking sheet. Spoon sauce over and turn several times to coat. Marinate 10 minutes at room temperature.
Grill, turning once, until shrimp are cooked through and edges lightly are charred, about 4 minutes. Serve hot.
