Recipe(tried): Shrimp with Ravioli in a Tomato Cream Sauce

Menus

This is my husbands favorite shrimp dish. I buy frozen, pre-cooked, peeled and deveined shrimp. Then all I have to do is pull off the tails and cut them up. Becareful when you heat them, not to overcook them, if you do that they become as rubbery as pencil erasers.

Shrimp with ravioli in a tomato-cream sauce:
Serves 2

8-10 oz pre-cooked shrimp, tails removed and cut into 1/2's or 1/3's
1 package lite cheese & garlic ravioli, cooked according to directions
2 teaspoons olive oil
1 small onion, sliced vertically
4 cloves garlic, sliced
1/4 cup white wine
2/3 cup prepared spaghetti sauce
1/4 to 1/3 cup half & half
salt and pepper to taste

Heat a non-stick skillet over med heat, add oil. Sautee onions and garlic in hot oil, until onions are golden. Add wine, cook until wine has evaporated. Add spaghetti sauce, let reduce for about 5 minutes. Add cream, and again let reduce for about 5 minutes. Add shrimp, cook until warm (about 1 1/2 minutes). Pour sauce over cooked ravioli. Add salt and pepper to taste.
