SKILLET NEW POTATOES WITH GARLIC
2 tablespoons butter or margarine
2 tablespoons oil
2 pounds small new potatoes (peel narrow band around potatoes if desired)
2 large unpeeled cloves garlic, or to taste
1/2 teaspoon salt, or to taste
Freshly ground black pepper to taste
Place all ingredients in large heavy skillet. Cover and cook over low heat or on grill over hot coals 40 to 60 minutes or until potatoes are browned and tender, shaking pan occasionally. Season with additional salt and pepper if desired. Discard garlic.
Makes 4 servings
