Recipe(tried): Skillet Tacos (using ground beef and corn tortillas)

SKILLET TACOS
1 lb ground beef
1 small red onion, chopped
1 (15 1/4 oz) can whole kernel corn, drained
10 (6-inch) corn tortillas cut into 1-inch pieces
1 (8 oz) bottle taco sauce
1 1/4 cups shredded cheddar cheese, divided use
hot pepper sauce (optional)
In a large skillet cook the beef and onion over medium heat until the meat is no longer pink; drain.
Add the corn, tortillas, taco sauce and 1 cup of the cheese. Heat through.
Sprinkle with the remaining cheese. Serve with the pepper sauce if desired.
Makes 6 servings
