SLOW COOKED SHREDDED BEEF CHILI
1 (2 to 3 pound) boneless beef arm roast
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can black beans, rinsed and drained
4 tablespoons chili powder, divided use
1/2 teaspoon salt
Tortilla chips (optional, for serving)
Shredded cheese or sour cream (optional, for serving)
Cut roast into chunks (1x2-inch) and place in a large slow cooker (minimum of 4 quarts). Add tomatoes, beans and 1 tablespoon chili powder.
Cover crock pot and cook on HIGH for 8 hours or until beef shreds easily. Stir in remaining 3 tablespoons of chili powder and salt.
Serve with chips, cheese or sour cream, if desired.
Makes 8 servings
