Recipe: Vegetarian White Bean Chili with Waffles

VEGETARIAN WHITE BEAN CHILI WITH WAFFLES

1 tablespoon butter or margarine
1 tablespoon all-purpose flour
1 cup evaporated skimmed milk
1 to 2 tablespoons chili powder
1 teaspoon dried basil leaves
1/4 teaspoon ground nutmeg
1 (10 ounces) package frozen mixed vegetables, thawed and drained
1 (16 ounces) can cannellini or other white beans, drained
1 cup (4 ounces) shredded Jarlsberg or Nokkelost cheese Warm waffles
1/2 cup finely chopped green onions

Melt butter in large skillet or saucepan over medium-high heat. Stir in flour using wooden spoon. Gradually whisk in milk until smooth consistency. Stir in chili powder, basil and nutmeg. Stir in mixed vegetables, beans and cheese.

Ladle over warm waffles and top with chopped green onions, if desired.

Makes 6 servings
