I have been cooking professionally for 16 yrs. >>>> my strength in the field has always been soups and sauces. I am surprised to see that in almost every recipe I read from your swap session (which I think is a great idea !!)....no-one adds their herbs or spices during the sautee process.....The people who taught me believed that making a good soup or sauce was like building a house >>>> You have to start with a strong foundation.....The herbs and spices are usually added just before your veggies go translucent and are only stirred once then cooked for 1 or 2 min.>>>>>>The liquid is then added and the mixture well combined ....try this and see if your seasonings don't permeate your recipies more thoroughly !!..........Love the site and will be in for some chat soon !!! ...................................
