Recipe(tried): Spinach Breakfast Casserole

Breakfast and Brunch

For Winnie - You requested a BH&G recipe back on the 18th. I don't have that
one but I have a fabulous spinach pie (breakfast casserole/quiche) recipe. My
college boyfriend's mom gave it to me and I cook it often for family brunches or
weekends with company....

Mrs C's Spinach Pie

1/2 lb. sweet Italian sausage
2 - 10oz. packages frozen spinach
1 - 8oz. package mozzerella cheese
1 cup cottage cheese
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. garlic
4 eggs
1 Tbsp. water
1 pie crust recipe (enough for top crust, too!)


Make crust and line a DEEP pie plate with pie crust.
Preheat oven to 375*

Remove sausage from casing and brown in skillet, drain. Thaw and squeeze
spinach until drained.

In mixer (or food processor) combine the eggs cottage cheese and seasonings.
Reserve 1 Tbsp. of this mixture. Fold together sausage, spinach, mozzarella and
egg mixture. Pour into pie shell. Add top crust sealing with 1 Tbsp water.
Prick crust with fork and then coat with reserved egg mixture.

Bake in 375* oven for 1 hour. Let stand 10 minutes before serving. Great hot
or cold. Makes 8 generous wedges!
