Recipe: Crustless Breakfast Quiche with Spinach (serves 2)

Breakfast and Brunch
CRUSTLESS BREAKFAST QUICHE WITH SPINACH

1 cup American or Swiss cheese, shredded
1/2 cup half & half or heavy cream
2 eggs, beaten
1 (10 oz) package frozen spinach, thawed and well drained
ground black pepper (to taste)
ground cayenne pepper (to taste)

Preheat oven to 325 degrees F. Coat a pie pan with cooking spray.

In a small saucepan, melt cheese in cream. Remove from heat and cool for 5 minutes.

Mix in two beaten eggs, black pepper, and cayenne to taste.

Stir in spinach. Pour into prepared pie pan.

Bake at 325 degrees F for 45 minutes or until set.

Servings: 2
