Recipe(tried): Sports Day Chicken Fingers with Honey Mustard Sauce and Bavarian Apple Pie

I am posting a recipe I have made before, Chicken Fingers with Honey Mustard Sauce. It is a sports day here at my home and that means DH is glued to the tv. Why fight it? Just make them something easy and good....I'll also make an apple pie for later with coffee.

Chicken Fingers with Honey Mustard Sauce
serves 6

4 skinless, boneless chicken breast
1 c. flour
1/2 t. salt
1/4 t. pepper
1/4 t. paprika
1/4 t. garlic powder
3/4 c. milk
1 c. veg. oil for frying

Honey Mustard:
1/2 c. honey
1/4 c. Dijon mustard

Cut chicken into 1/2x2-inch strips. Blend the honey mustard sauce ingred. together and refrigerate. Mix flour and all seasonings in a shallow bowl. Dip the strips in milk and roll in flour to coat well. Place the strips on a plate. Pour 1/4-inch oil in skillet and heat over med. high. Fry in batches turning once for about 3 min. on each side. Drain on paper towels and serve with sauce.

BAVARIAN APPLE PIE

FOR THE PASTRY:*
1/3 cup butter, softened
1 Tbsp. vegetable shortening
1/3 cup sugar
1/4 tsp. vanilla
1/8 tsp. salt
1 cup sifted flour
FOR THE FILLING:
1/4 cup sugar
1 (8 oz.) pkg. cream cheese, softened
1 egg
1/2 tsp. vanilla
1/2 tsp. lemon rind
1/8 tsp. salt
FOR THE TOPPING:
5 Golden Delicious Apples, peeled, cored and sliced
1/3 cup sugar
1/2 tsp. ground cinnamon
1/4 cup chopped nuts

Preheat oven to 450 degrees F.

TO PREPARE THE PASTRY:
Cream butter and shortening together; add 1/3 cup sugar, 1/4 teaspoon vanilla and 1/8 teaspoon salt. Blend in flour. Pat this into the bottom of a 9-inch springform pan. Set aside.

TO PREPARE THE FILLING:
Mix together well the filling ingredients. Spread on top of the pastry. Set aside.

In a large bowl, toss the apple slices with 1/3 cup sugar and cinnamon, then the nuts. Put this on top of the filling.

Bake at 450 degrees for 10 minutes. Reduce heat to 400 degrees F (leave pie in oven) and bake 25 minutes more. Cool before removing from pan.

*For a shortcut, you can always use a pie shell from the freezer section of your grocer.
