Melissa: "The page in the cookbook where this recipe is found is brown from cocoa powder spills. I modified the recipe to use cocoa powder instead of unsweetened chocolate."
1 cup unsweetened cocoa powder
1/2 cup plus 2 tablespoons butter or shortening
2 cups sugar
2 teaspoons vanilla extract
4 eggs
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 (6 ounce) package chocolate chips
1 cup powdered sugar, sifted
Melt butter and stir in cocoa powder and sugar. Place mixture in a medium bowl and cool. Beat until blended. Add vanilla. Beat in eggs one at a time, mixing well after each addition.
In another medium bowl, sift together flour, baking powder and salt. Stir flour mixture into chocolate mixture. Stir in chocolate chips.
Refrigerate dough for several hours or overnight.
WHEN READY TO BAKE:
Preheat oven to 375 degrees F. Lightly grease baking sheets.
Break off small pieces of chilled dough and form into 1-inch balls. Roll in powdered sugar. Place cookies 2-inches apart on baking sheets.
Bake for 10 minutes. Immediately place on rack to cook.
Makes about 70 cookies
