Recipe: Strawberry Crunch

Hi Jean;
This recipe does not call for ritz crackers, but I don't know why you couldn't crumble some and add to the crust. I have been looking in community cookbooks ever since I read your post and this is the closest I could come to what you are looking for.
STRAWBERRY CRUNCH
1 stick margarine
1 cup flour
1/4 cup brown sugar
1/2 chopped pecans
2 egg whites
1 pkg frozen strawberries, thawed
1 tsp. lemon juice
2/3 cup sugar
1 cup whipping cream, whipped
Mix margarine, flour, brown sugar,and pecans together. Bake in large shallow pan for 25 minutes at 3258. Stir every 5 minutes while baking. Crumble into pan large enough for 12 servings (reserve 1/4 of mixture for topping.
Make strawberry topping by beating egg whites, strawberries, lemon juice and sugar in mixer for 20 minutes. Fold in whipped cream. Pour strawberry topping over crust mixture. Sprinkle the last part of crumb mixture over strawberry topping. Freeze. Serves 12
I will keep looking and see if I can find anything closer.
