Recipe: Strawberry Fluff Pie

STRAWBERRY FLUFF PIE

3 eggs
1 c. sugar
2 tsp. vanilla
1/2 c. sour cream
2 Tbsp. cornstarch
18 saltine crackers
1 c. chopped pecans
1 pkg. Dream Whip
2 pt. fresh strawberries
red food coloring

Beat egg whites until stiff but not dry, then gradually
add 1 cup sugar and 2 teaspoons vanilla. Fold in the crumbs of
18 saltine crackers and 1 cup chopped pecans. Put mixture in a
well greased pie tin and bake at 350 degrees for 30 minutes. Cool.
Prepare 1 package Dream Whip as directed on box. Fold in 1/2
cup sour cream. Pour into cooled pie crust. Clean, wash and
cut in halves all the strawberries. Cover them with 1 cup
sugar (let stand until syrup has formed). Drain syrup from
strawberries (should measure 1 cup; if not add water to make 1
cup). Pour syrup in saucepan with 2 tablespoons cornstarch and
a few drops of red food coloring. Arrange strawberries on top
of cream pie filling, then pour syrup over berries. Refriger-
ate 1 hour before serving.
