CHICKEN COUSCOUS DELIGHT
2 pounds boneless, skinless chicken thighs, cut into 1 inch chucks
1 onion, coarsely chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (14 1/2 ounce) can ready to use chicken broth
1 (16 ounce) package frozen mixed vegetables
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
1 (10 ounce) package couscous
Coat a 6 quart soup pot with non stick cooking spray. Add chicken, onion and garlic; cook over medium high heat 8 to 10 minutes, or until browned.
Add tomatoes, chicken broth, vegetables, cinnamon ,salt and pepper; bring to a boil. Reduce heat to low, cover and simmer 15 to 20 minutes, or until chicken is no longer pink inside.
Stir in couscous, cover and remove from heat. Let stand 4 to 5 minutes, or until couscous is tender.
Fluff with a fork and serve immediately.
