Recipe(tried): Strawberry Muffins for Julie............

I can't take credit for this recipe, Julie. I found it on TKL. These were
delicious. We had them for dessert and for breakfast.

Fresh Strawberry Muffins

2 1/2 C. self-rising flour
2/3 cup sugar
3/4 tsp. cinnamon
1 1/2 C. sliced fresh strawberries
1 cup buttermilk
1/3 cup margarine, melted
1 1/4 tsp. vanilla extract
1 egg, lightly beaten
1 egg white, lightly beaten
Vegetable cooking spray
1 1/2 T. sugar

Combine flour, sugar, and cinnamon in a large bowl and stir well. Add fresh
strawberries and stir well. Make a well in the center of the mixture.

Combine buttermilk, margarine, egg, and egg white; stir well. Add to dry
ingredients, stirring just until moistened.

Divide batter evenly among 18 muffin cups coated with cooking spray. Sprinkle
1 1/2 T. sugar evenly over mufins. Bake at 350 degrees until golden brown.
Remove from pans immediately and let cool on a wire rack.

Julie, I used cupcake liners instead of spraying the muffin pans with PAM. I
also noticed that we didn't have buttermilk so I made my own. To make
buttermilk, add 1 T. white vinegar or lemon juice to 1 cup of milk. Stir the
mixture thoroughly and let it set for 10 minutes. After 10 minutes you will
have buttermilk.
