Recipe(tried): Shrimp Egg Foo Yung

I went on a quest for real egg foo yung after trying 10 different restaurants I realized I had to make it myself if this New York girl was gonna get Egg Foo Yung in Texas.

Start by dicing half an onion. Add 1/2 a cup of mung bean sprouts to taste. Chop up the bottom of two scallions, and add a 1/2 lb of shrimp (uncooked). Add 4 eggs and mix in bowl.

In a small frying pan heat 1/2 inch of oil when hot drop a ladle full to cover the pan of mixture allow to fry about 6-8 minutes on each side until the edges begin to brown flip and brown on the other side. Drain and continue to make pancakes, this should make two large patties.

Serve over white rice with gravy as follows.

GRAVY:
Boil one cup of water with beef paste (you can use bouillon) add soy sauce (a good brand, about a tablespoon), a drizzle of sesame oil (toasted).

In a small cup mix 1 tbsp of cornstarch with a quarter cup of water mix into beef mixture allow to come to a boil, add chopped scallion tops and pour over egg foo yung.

Note:
Other meat or vegetables can be substituted. Meat should be cooked mushrooms can also be added to shrimp egg foo.
