Recipe: Paul Prudehomme's Meat Magic Recipe for Pork and Veal

Herbs and Spices
These are seasoning mixes from Paul Prudehomme's Louisiana Kitchen Cookbook.

VEAL:
2 1/4 tsp salt
1 1/4 tsp sweet paprika
3/4 tsp onion powder
1/2 tsp ground cayenne or red pepper
1/4 tsp ground white pepper
1/2 tsp garlic powder
1/4 tsp dry mustard

PORK:
2 tsp ground black pepper
1 1/2 tsp salt
1 tsp ground white pepper
1 tsp ground cayenne or red pepper
1 tsp sweet paprika
1 tsp dried thyme leaves
1/2 tsp dry mustard
