STRAWBERRY PATCH DESSERT

1 1/4 c. graham cracker crumbs
1/4 c. br. sugar
1/4 c. melted butter or marg.
24 marshmallows
1/2 c. milk
1 pkg. strawberry jello
1 c. boiling water.
1 pkg. frozen sliced strawberries
1 c. whipping cream or 1 pkg dream whip

Mix together the first 3 ingredients and press into a 9 x 9 pan, set aside. Melt marshmallows in milk, in micro, stir until no lumps remain, cool. Dissolve jello in boiling water, stir in berries until well mixed. Pour berry mixture over crust. Beat whipping cream or mix up 1 envelope dream whip (not as fattening) and fold whipped cream into marshmallow mixture until totally combined. Spoon onto jello layer. Chill in fridge 2 -3 hrs, until set. Can be made 1 day ahead.
Variations: Recipe can be doubled for a 9 x 13 in pan. For a slightly different flavour, use raspberry jello with the strawberries, can also make this using raspberries and can add a few blueberries too. It's delicious all ways! Guests always love the topping, and can never guess what's in it!

STRAWBERRY MOUSSE TORTE

1 pkg. white cake mix (Betty Crocker)
1 pkg. stawberry jello
3/4 c. boiling water
1 envelope Dream Whip or 1 c. whipping cream
1/4 c. orange liqueur (opt)
1/4 c. red current jelly -- melted (opt)
3 c. fresh strawberries

Make up cake mix as directed (I find that Betty Crocker is the best brand). Bake this in a 9 inch. spring form pan. Put a circle of waxed paper on the bottom of the cake pan(cut to fit) and grease the sides, before you pour in the batter. Bake, remove from pan and cool. This can be made ahead and frozen if desired.
Dissolve jello in boiling water. Puree 2 c. of strawberries, save the best for decoration. Add strawberry puree to jello. Chill until slightly thickened. Prepare dessert topping mix according to directions or whip cream. Fold jello mixture into cream, stir in a bit first to lighten it a bit, then finish by folding. Cut cake into 2 layers. Brush cake layers with booze. Place one layer cut side up in bottom of springform pan. Pour mousse mixture over cake. Place second layer, crust side up on top of mousse. Chill at least 3 hrs. Brush 2 Tbsp. jelly over cake top. Slice remaining strawberries, arrange in a decorative pattern on top of cake. Brush remaining jelly over strawberries.
You can also put 10 or 12 strawberry slices on the side of the cake the base end of the berry level with the bottom of the cake and the tip pointing straight up. You could also cover the whole cake with whipping cream before decorating with berries.

SPINACH AND STRAWBERRY SALAD

1 pkg. fresh spinach
1 bskt. fresh strawberries
1/3 c. almond slices -- toasted
DRESSING:
1/4 c. sugar
2 Tbsp. sesame seeds
1 1/2 tsp. finely chopped onion
1 Tbsp. poppy seeds
1/4 tsp. worchestershire sauce
1/2 tsp. paprika
1/2 c. veg. or olive oil
1/4 c. apple cider vinegar

To make dressing, put all ingredients in a clean glass jar and shake. Refrigerate until serving time. To toast almonds, bake in a preheated oven 350 deg. on a pie plate for about 10 min., until golden. Cool and store in a glass jar.
Wash and dry spinach, remove stems, place in a pretty salad bowl. Slice or quarter strawberries and add to spinach. When ready to serve drizzle dressing over salad, toss, then sprinkle with toasted almonds.
Variation: Pile onto individual plates, add sliced cucumber, and 1/2 c. fresh shrimp, drizzle with dressing and sprinkle with almonds. Good with cantalope too. My friend Pat got this recipe at a teachers "potluck" where it was extremely popular!

STRAWBERRY CHEESECAKE BARS

2 c. flour
1/2 c. powdered sugar
2/3 c. firm butter or margarine
2 pkg. cream cheese (250 gr-8oz. each)
1/2 c. sugar
2 eggs
1 pkg. frozen strawberries in lite syrup -- (10 oz) undrained,
thawed

Preheat oven to 350 deg. Mix flour and powdered sugar, cut in margarine with fork or pastry blender until fine crumbs. Press firmly and evenly into ungreased 9 x 13 pan. Bake 15 min. Beat cream cheese in medium bowl until smooth and fluffy. Beat in sugar and eggs. Stir in strawberries (with liquid). Spread cream cheese mixture over baked layer. Bake 20-25 min. or just until centre is set. Cool completely. Cover loosley and refrigerate bout 4 hrs. or until firm. Cut into bars. Refrigerate any remaining bars. Garnish with sliced stawberries if desired. Make 3 dz.
