Recipe(tried): Swedish Meatballs and Pasta Machine Tagliatelle

I am soo glad that it is finally cooling off. I am not a summer person at all. This is something that I like to make on cooler nights because both my husband and daughters love it.

Swedish Meatballs

Meatballs
1/4 cup egg substitute
1 pound ground turkey
3/4 cup bread crumbs
1/4 cup chopped onion
1/4 cup parsley
1/8 tsp allspice
dash salt and pepper

Mix all ingredients well, I find my fingers to be the best. Shape into meatballs to desired size, I make into 1 once. Saute in a deep fry pan in 1 tbsp butter for about 10 mins, untill they are cooked. Remove meatballs from pan and complete following recipe in the pan using the drippings.

Sauce

1 cup milk
1 1/4 cup light cream
2 Tbsp all purpose flour
2 Tbsp instant beef bouillon granules
1/8 tsp pepper

In the hot pan from the meatballs, stir in flour, bouillon granules and pepper with the drippings. You will from a roux. Then slowly add milk and stir continually. Once it starts to bubble, add meatballs. I think this is best served over noodles. I make tagliatelle with my pasta machine which my husband loves.

Pasta Machine Tagliatelle

2 cups bread machine flour
2 Tbsp olive oil
1 large egg
1/4 cup water

Place the flour in the pasta maker. Mix the oil, egg and water. Then slowly add the liquid with the machine turned on. I have found that sometimes I have liquid left over. The flour must be small pea sized lumps and it is ready. That is why I add the liquid slowly. If too dry after adding all liquid, slowly add a little bit of water to get the peas, or if too wet, slowly add flour.

Cook in 4-6 qts of salted boiling water for about 3-5 mins only. Don't over cook.

With this I am cooking to serve fresh cucumbers with oil and vinegar and lightly salt and pepper. For dessert I am going to make my grandmothers apple crisp, which is my husbands favorite, although the top tends to disappear and leave behind some lonely apples. Unfortunetly, this is the only recipe I have from my grandmother who was an excellent chef. Sometimes I think that I am trying to cook stuff to taste the way it did when she made it.
