Hi!
This is an easy dish to make and delicious to eat with your ham sandwiches.
SWEET POTATO CRUNCH
Servings: 8-10
6 sweet potatoes
CRUNCH TOPPING:
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup melted butter
1 tblsp. cinnamon
FOR THE POTATO MIXTURE:
1 cup sugar
1 stick (1/2 cup) butter, softened
2 eggs, beaten
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. orange extract
1 tsp. vanilla extract
FOR THE TOP:
handful of small marshmallows
Preheat oven to 350 degrees F. Butter a 2 1/2 quart casserole.
Boil potatoes til tender. Drain and set aside until cool enough to handle.
Combine ingredients for crunch topping; set aside.
Take skin off cooled potatoes, put in a large bowl and whip them til fluffy adding all other ingredients for potato mixture. Pour into prepared casserole and top with the crunch topping. Sprinkle with marshmallows.
Bake at 350 for 45 minutes.
