Recipe: Confetti Potato Casserole (with peppers, onion, cheese and bacon)

CONFETTI POTATO CASSEROLE

1 1/2 lb potatoes, cut in cubes
1/3 cup water
2 tbsp butter
1 medium onion, chopped
1/2 cup chopped bell pepper
1 (2 oz) jar diced pimiento
1/2 tsp salt
1/4 tsp ground black pepper
1/2 cup shredded Cheddar cheese
3 slices bacon, cooked and crumbled

Combine potatoes and 1/3 cup water in a 2 quart casserole dish. Cover and microwave at HIGH power 8 to 10 minutes or until potatoes are tender, stirring after 4 minutes; drain.

Add butter, stirring until butter melts. Add onion, bell pepper, pimiento, salt, and pepper.

Bake at 375 degrees F for 25 minutes. Sprinkle with cheese and bacon and bake an additional 5 minutes or until cheese melts.

Makes 4 servings
