Recipe: The recipe I have is called Coconut Joys

I keep a separate file for coconut candies and cookies. Here is one that fits your description.

Coconut Joys
1/2 cup butter or margarine
2 cups sifted powdered sugar
3 cups flaked coconut
2 cups (12 ounces)semisweet chocolate morsels

Melt butter in a saucepan over low heat; remove from heat. stir in sugar and coconut; shape into 3/4 inch balls. Chill unto firm.

Microwave 2 cups semisweet chocolate morsels in a 2-cup glass measuring cup at HIGH for 1 1/2 minutes or until melted, stirring twice. Dip coconut candies in melted chocolate, allowing excess to drip, and place on wax paper. Let stand until firm.

OR as an alternative method:

Use 1/3 cup chocolate morsels, (instead of the 2 cups)and place them in a small heavy duty zip-top plastic bag; seal. Submerge in hot water until chocolate melts. Dry bag; snip a tiny hole in 1 corner of bag, and drizzle chocolate over chilled coconut balls. Store in refrigerator. Yield: 3 1/2 dozen.
