Betty, here are a few more and some different things to do with tomatoes. You probably have alot more good tomatoes to come this season!

Deluxe Tomato Preserves

Amount Measure Ingredient -- Preparation Method

1 tablespoon mixed pickling spices
1 piece fresh ginger
4 cups sugar
2 lemons, thinly sliced
3/4 cup water
6 cups (about 2 lbs) small firm, peeled tomatoes

Tie spices in a cheesecloth bag; add to sugar, lemon slices, and water. Simmer for 15 min. Add tomatoes, without removing cores; cook gently until thet become clear, stirring occasionally to prevent sticking. Cover and let stand for 12 to 18 hrs. in a cool place. Pack tomatoea and lemon slices into hot sterilized jars, leaving 1/4" head space. Remove spice bag. Boil syrup for 2-3 min., or longer, until desired consistency. Pour, boiling hot, over tomatoes, leaving 1/4" head space. Adjust caps. Process in hot water bath for 20 min. Yield: 6 (8oz) jars. - - - - - - - - - - - - - - - - - - * Exported from MasterCook *

Tomato Jam

5 pounds ripe tomatoes
5 cups firmly packed brown sugar
2 1/2 cups vinegar
1 tablespoon whole cloves
1 tablespoon whole allspice
1 stick cinnamon
3 cups seedless raisins -- chopped

Peel and quarter tomatoes. Add sugar, vinegar, and spices tied in cheesecloth. Boil slowly for 2 hrs.; add raisins and boil for 1 hr. longer. Remove spices and pour tomato mixture into hot sterilized jars to within 1/4" of top. Seal and process in hot water bath for 10 min. Yield: 6 pts.

Tomato Jelly

Amount Measure Ingredient -- Preparation Method

2 3/4 cups tomato juice
2 tablespoons lemon juice
1/4 teaspoon onion powder -- optional
few drops of hot sauce or grains of red pe
1 (1-3/4oz) pkg. powdered fruit pectin
4 cups sugar

Combine all ingred. except sugar in a large (4-6 qt) kettle. Stir over high heat until mixture reasches a rapid boil. Stir in sugar; bring to a full rolling boil. Boil 1 min. Remove from heat. Quickly skim off foam. Pour ino hot sterilized jars and seal. Yield: 4 (8oz) jars

Tomato-Pineapple Relish

Amount Measure Ingredient -- Preparation Method

2 cups (3/4lb) prepared ripe tomatoes
1 (1-3/4oz) pkg. powdered pectin
1 1/2 cups (13-1/4oz can) crushed pineapple
2 teaspoons Worcestershire sauce
2 tablespoons vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
5 1/2 cups sugar

Scald, peel and chop tomatoes. Bring quickly to a boil. Simmer and stir for 10 min. Measure 2 cups tomatoes into a very large saucepan. Mix pectin, pineapple and seasonings with tomato. Bring to a boil. Add sugar; bring ta a full rolling boil and boil hard for 1 min.; stirring constantly. Remove from heat; skim foam. Stir and skim for 5 min. Ladle into jars. Seal at once. Yield: 8 (8oz) jars

Tomato Honey Chutney

Amount Measure Ingredient -- Preparation Method

3 1/2 cups chopped tomato
3 cups chopped peeled pears
3 cups chopped peeled apples
1 cup chopped green pepper
1/2 cup chopped onion
1 1/2 teaspoons salt
1 cup chopped seedless raisins
1 teaspoon dry mustard
1/2 cup vinegar
3/4 cup honey

Put all ingred. except honey in a large saucepan. Bring to a full rolling boil. Reduce heat and simmer for 30 min., stirring occasionally. Add honey and mix well. Continue to simmer for 30 min. or until thickened. Spoon into hot sterilized jars and seal at once. Process in hot water bath for 15 min. Yield: 2 pts.
