Recipe(tried): Two more ideas for grape tomatoes
Recipe CollectionsADVERTISEMENT
I'm growing grape tomatoes for the first time this year. Here are two new uses I've found. Last week I used them to make bruschetta -- chopped them and added some chopped black olives, fresh basil, garlic, Parmesan cheese, a splash of balsamic vinegar, salt and pepper, and a 'blub-blub' of e.v. olive oil. Spooned it atop toasted Italian bread slices that were rubbed with a cut garlic clove.
The week before that, I used them as a relish on deli beef sandwiches. For them, I halved or quartered the tomatoes and added fresh basil and balsamic vinaigrette dressing and let it stand for a little while. Assembled the sandwiches on crusty hoagie rolls, using Italian beef from the deli counter and slices of Provolone cheese. Topped these with the tomato mixture, drizzling a little of the juices onto the bread's cut surface. These were to be taken on a picnic, so I wrapped them in plastic wrap, pressing everything together tightly; it seemed to blend the flavors together nicely.
