Recipe(tried): Vegetarian Meatballs

Misc.
I hope this recipe is at least similar to the one you want. I prepare this recipe at least 2-3 times a week. It is so tasty.

"Meat Balls"

3 eggs, beaten
1 c. small curd cottage cheese (I use "No Fat")
2 Tbsp. diced onion (I use more for taste)
3/4 tsp. poultry seasoning
3/4 tsp. sage
1 c. seasoned stuffing mix
1/2 c. minced nuts (I use Eng. Walnuts)
Salt to taste (I find the seasoning mix is salty enough)
Sometimes I add 1/2 tsp. garlic powder for a taste change
Pan spray for browning

Mix all ingredients and let sit for about 5 minutes to soften the ingredients. Shape into balls or patties and brown in medium-low heated skillet.

These may be used in spaghetti sauce, or topped with barbecue sauce or used as burgers. This is a wonderful tasting and versatile recipe. Very economical and nutritional too!
