Recipe: Monte Cristo Bread Pudding
Breakfast and BrunchMONTE CRISTO BREAD PUDDING
1 tbsp. butter
8 slices whole wheat bread, cut into quarters
6 slices (about 2 oz.) deli cooked ham
6 slices (about 2 oz.) deli cooked turkey breast
1/4 cup Creole mustard
6 eggs
2 cups milk
1/8 tsp. salt
1/4 tsp. pepper, or to taste
1 cup shredded Swiss cheese or Cheddar/Colby cheese combination (4 oz.)
Coat the bottom of a 9x13x2-inch baking dish with the butter. Arrange half of the bread on bottom of dish. Layer the ham and turkey over the bread. Spread the Creole mustard over the meat slices. Top with remaining bread.
Beat eggs and milk with a whisk in a medium bowl. Season with salt and pepper. Pour the egg mixture over the bread. Sprinkle on cheese. (Dish can be prepared to this point the night before. Cover with plastic wrap and refrigerate. Remove plastic wrap when ready to bake.)
Bake at 350 degrees for 30 minutes or until center is set and top is golden.
Makes 8 servings
