VEGGIE BURGERS

8 ounces mushrooms
2 cups cooked black beans, divided use
1 cup cooked and cubed russet potatoes
2 eggs
1 egg white
1 cup diced onions
1 cup whole wheat flour
2 cups quick raw oats (oatmeal)
1/2 cup sour cream
1/4 cup ketchup
2 tablespoons corn oil
1 tablespoon A-1 sauce
1 1/2 teaspoons minced garlic
1 tablespoon dried basil
2 tablespoons dried parsley
3/4 teaspoon salt
3/4 teaspoon coriander
Pinch of cayenne pepper

In a food processor, blend together the
mushrooms, 1 cup of the black beans,
potatoes, eggs and egg white and onions until
thoroughly blended.

Transfer to a large bowl and add the
remaining ingredients. Stir well until all the
ingredients are moistened and blended.

Heat a griddle or large saute pan over medium
high heat. Drop the veggie burgers by
heaping ' cupful onto the hot griddle. Flatten
as necessary to desired thickness and
shape. Cook on each side for 4 to 5 minutes.

Serve with desired condiments and extras on
hamburger buns.

Makes 12 servings.
