Recipe: Walnut-Crumble Muffins (microwave)
Misc.WALNUT-CRUMBLE MUFFINS
1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter
1/2 cup milk
1 egg, beaten
FOR THE CRUMB TOPPING:
1/3 cup firmly packed brown sugar
2 tablespoons chopped walnuts
1 tablespoon flour
2 teaspoons ground cinnamon
In a large bowl, combine flour, sugar, baking powder and salt. Cut in butter until mixture is crumbly. Make a well in the center.
In a small bowl, combine milk and egg; pour into well. Stir just until dry ingredients are moistened.
Place paper liners in microwave-safe muffin dishes. Spoon batter into cups, filling half full. Sprinkle 1 heaping teaspoon Crumb Topping on each muffin.
Microwave 6 muffins at a time on high (100 percent) until topping appears slightly moist (3 to 4 minutes). Let stand 5 minutes.
