WARM CHICKEN TACO SALAD
4 (about 1 1/4 lb total) chicken breasts, boneless, skinless, cut thin strips
1/2 cup Miracle Whip (or mayonnaise), divided use
1 cup chopped fresh tomato
1 envelope taco seasoning mix
FOR SERVING:
4 cups tortilla chips
4 cups shredded Lettuce
Cheddar cheese, shredded
Olives, sliced
Green onions, sliced
Cook chicken in 1/4 cup Miracle Whip in large skillet on medium-high heat for 3 minutes.
Stir in the remaining 1/4 cup Miracle Whip, tomato and taco seasoning mix. Cook 5 minutes or until chicken is cooked through.
TO SERVE:
Layer tortilla chips, lettuce and chicken mixture on large platter. Top with Cheddar cheese, olives and green onions.
Makes 4 servings
